Are so good for you! Packed with iron and all sorts of oxidizing nutrients. So should I be concerned if Soren eats a whole one by himself? Probably not!
They are a staple favorite in our house. Soren takes them roasted in foil and served plain. I love that his pink tongue is from a highly nutritious root vegetable instead of a lollipop (although he had one of those today as well...) .
Dinner was followed by chocolate chip cookies (Soren made), bubble bath and stories. But dinner time... dinner has to be one of my favorite parts of every day. It's my chance to share something new with him and see where he takes it. He has such a palette at 2 1/2! I hated most of the foods he will steal off of my plate at his age. He's a sucker for Indian food, loves his Green Dog burritos, the grilled cheese truck is one of his favorites not to mention the StreetPops on Main Street. And brussel sprouts. Can't keep him away!
Here's how Soren likes his beets!
Whatcha need:
3-4 medium to large size beets
foil
Pre-heat 400 degrees. Cut the stems of the beets about an inch from the top. Wash well and wrap in the foil. Drop in the oven for 45 minutes to 1 hour and half. Stab the beets with a knife to test for desired softness.
When they are finished I unwrap them carefully under cold water, peel, chop and serve! So good! Even better with some balsamic vinegar and/or feta cheese.
