Cinema. This is very cool! Here is a quick run down -

Cincinnati World Cinema is an organization bringing to you (greater Cincinnatians) - High-quality Cinema you won't see at other theaters in Cincinnati - first-run and classic, independent, international, documentaries and shorts.

Wow! Cool, huh? Where you might ask? Easy - at the Carnegie in Covington. Showings are Tuesdays and Wednesdays and Saturdays and Sundays. Times

So now on to Chico & Rita. For Valentines - they are featuring this most excellent animated film. To make a night of it, catch dinner before the movie!! Anyway - tix are 12 bucks at the door and the film looks great, PLUS, I am reading the winning essay from Cincinnati World Cinema's 'tell us your love story...' contest.​

EATON INSPIRED EMPANADAS

So, we just recently had a house guest this past weekend, and by house guest, I mean in our two family house and by we, I mean really - the Eatons. Our amazing hosts upstairs had one of our most loved mutual friends in town, and boy do they do it right! Since we have the wee one and our place is needless to say - kept for baby, they asked if it was alright if they cooked, but we ate down in our apartment. I was like 'really, seriously - you expect me to say NO?!

Absolutely!!!' Now, mind you, our culinary expert, C. Eaton has quite the reputation for delicious food, and if one could live beyond that expectation - she does. So of course, I was MORE than delighted to eat some delicious food with fantastic company.

One of those dishes - roasted vegetable empanadas. In case you, like me at the time, furrowed your brow and asked what on earth is an empanada. I will explain it simply - a spanish hot pocket. Much better than a hot pocket, but that gives you the general idea. There were a many other fantastic dishes that accompanied the empanada and an even more delicious breakfast the next morning. But I will save that for another post (like J. Eaton's lentil soup! If you know me, you KNOW how much I LOVE lentil soup!)

Inspired by my neighborly culinary genius, I made some empanadas of my own - Broccoli Cheddar Empanadas. great for freezing for future meals!

Broccoli-Cheddar Empanadas Empanada Dough

Ingredients:

makes about 12

Soren Approved!

2 1/4 cups unbleached all-purpose flour (I used 1 cup whole-wheat and 1 1/4 cups unbleached, if this is the case you will need extra cold water - add a tablespoon at at time)

1 1/2 teaspoons salt

1 stick (1/2 cup) cold unsalted butter, cut into 1/2-inch cubes

1 large egg

1/3 cup ice water

1 tablespoon distilled white vinegar (I only had white wine vinegar and that worked fine...)

Sift flour with salt into a large bowl and blend in butter with fingertips or pastry blender until mixture resembles coarse meal (roughly pea-size butter lumps)

Beat together egg, water and vinegar in a small bowl with a fork. Add to flour mixture, stirring with fork until just incorporated (mixture will look shaggy)

Turn out mixture onto a lightly floured surface and gather together, then knead gently with heel of hand once or twice, just enough to bring dough together.

Form dough into two flat rectangles and chill, wrapped in plastic wrap, at least 1 hour.

Filling:

1 cup diced celery

1 cup diced carrot

2 cups cut Broccoli, about one head (I used a bunch of Broccolette with most of the stems - turned out really nice!)

1 small yellow onion2 cloves garlic diced

1-2 tablespoons olive oil

@ 1/2 cup mild cheddar cheese (depends on how cheesy you like your empanada)

Preheat the oven for 400 degrees fahrenheit

Heat olive oil in pan over moderate heat. Add onion and garlic and cook for about 6-8 minutes, just before onion becomes translucent. Add celery, carrot and broccoli and cook until just about tender. Try not to over cook since the filling will also cook in the oven inside the dough.

Roll out the rectangles (one at a time, unless you have a ridiculous amount of counter space) to 1/8" thickness. Cut dough into 5" circles (I found a glass storage container that was EXACTLY 5" and cut around that). Hold dough circle in palm of hand and add 2 tablespoons filling and a sprinkle of mild cheddar cheese in the middle. Fold the sides together and close the edges in a half moon shape (like a taco) by gently pulling the dough together and out. Now you can complete your edge with fork marks, or, in my case I ripple mine by folding in overlapping triangles - almost pie like. Either way - just be sure it is sealed. It may not seam like a lot of filling in each, but you also don't want to overfill them.

You will most likely end up with extra filling - more reason to make more dough.

Place on parchment paper lined baking sheets. Egg wash (yolk and water) the top sides facing the heat - BE SURE TO DO THIS STEP! And place in the oven for 20-25 minutes (I placed them in thirds and swapped them halfway through).

Enjoy! I know Soren and I did! We will be doing these again soon - maybe with a different filling.

Another Day, another Strike!

As luck would have it, actually, really just the CSO schedule, no luck at all - there is a Pops concert next week, WHICH MEANS - not only will I get to see family over the weekend, but my lucky toukes gets to climb in the attic today and strike Microphones! (GRRRRR!).​

This is quite possibly one of my least favorite things to do at my job aside from Mic. Hangs, and editing coughs out of broadcasts (yes, this is where you ALL should be thanking me...after each cough removal session I am pretty sure I walk away with a new form of pneumonia aurally contracted... yuck!)

Anyway - all in all, I do love my job and as one of my co-workers said right before the concert on a Sunday, 'sure does beat working for a living'. And he couldn't be more right. So up we go, into the rafters and down ladders to crawl spaces abound to coil up cables and chat with Music Hall ghosts!

LITTLE AVES

I am SO excited! My niece, Lil' Miss Aves is coming in town this weekend. This sweet little angel girl is AWESOME. And as much as I am going to enjoy hangin' with my ultra-cool sister-in-law, I absolutely can't wait to snuggle the first babe of the youngest VandeDrink generation. She is as precious as precious can be and always has been.

This little bitty, which she is (really, seriously the most adorable petite thing) - was my first eye opening experience to how amazing the human body is and how life altering bearing children can be, for everyone in the family. After she was born, I made as many trips to the Lou that I could, I just couldn't get enough of her! And seeing my sis-in-law and my broster's face light up at the sound of her first laughs and smiles made my heart grow, like - a million sizes.

So there you have it little Aves, you changed your aunt's priorities with your first breath in this world. A year later my world would be absolutely flipped in the best way ever with the birth of your cousin.

I heart you baby girl - so, so, much and I can't WAIT to see you this weekend!​

I'LL MISS DIAPERS...

As Soren gets closer to understanding how the 'potty' works (every time either Rick or I go into the restroom, he now chases after us going 'sssssssssss', opens his potty and sits on it - ♥!), I have really started to analyze the things that I will miss and things I clearly won't - like bumper pads....

I loathe the bumper pads. And I know that recent research has revealed that bumper pads are dangerous and such, but B.S. (before Soren...) they were still 'ok'. Alas - he is used to them - they make him feel safe, and he doesn't sleep without them. And changing sheets is quite the chore because of it. I will NOT miss the bumper pads.

OR

My breast pump. OMGoodness, the breast pump. Anyone want to have a burning of the pumps? Now don't get me wrong, I LOVE nursing, and Soren is still nursing at least morning and night, but pumping?! Is just flat out un-natural, un-comfortable, un-enjoyable and just flat out UN! However - although trying as it may have been to pump, it was SO worth it. My little man has been super healthy and like I said, still nursing, which I adore.​

The things I miss and will miss...well, that list will always be lengthy. I already miss his infancy. When he absolutely depended on us for everything. I miss his tummy tub days when he would swim in his bucket of a tub as if he were in utero. I miss his coes, but love his baby chatter. I miss burping him but love watching him dig into a plate of collard greens or marinated portabellas. And yes, I will miss his diapers. Being clothed diaper - we have put a lot into it both mentally and physically (figuring out the best detergent, covers, and diaper style...) and I still adore pulling them out of the dryer and stacking the pre-folds, knowing my lil' one's tushy is being handled delicately. I will miss footy pajamas. I miss his army crawl but love watching him run. I miss our naps but still adore rocking him to sleep. The list could go on.

So as usual, I am reminded to never forget and enjoy every moment (but I am still up for a ceremonial breast pump burning...)
